Fabrice Huet Appointed Executive Chef of The St. Regis Princeville Resort


KAUA‘I, Hawaii – The St. Regis Princeville Resort is pleased to announce the appointment of Fabrice Huet as Executive Chef. Huet will lead a talented staff of 57 kitchen professionals and oversee the resort’s culinary operation.

As Executive Chef, Huet will also direct the menu development of the resort’s four restaurants, including the Makana Terrace, The St. Regis Bar, Nalu Kai Bar & Grill and the resort’s signature restaurant, Kauai Grill presenting the exquisite cuisine of internationally acclaimed Chef Jean-Georges Vongerichten.

“Chef Fabrice has extensive knowledge of the hospitality and culinary industry spanning 29 years, and strong experience in Hawaii and internationally, stated Milton Sgarbi, General Manager. “He is a tremendous asset to The St. Regis Princeville Resort and will play an integral role at the property”.

Huet considers himself to be a purist saying he “prefers to peel off the layers of the product so that every component is a star on the plate”. “I’m looking forward to working with our gifted team to elevate our dining experiences at the St. Regis Princeville Resort”, stated Huet.     

Chef Huet’s impressive career includes a decade with Four Seasons Hotels & Resorts in various locations throughout the world, most recently as the Executive Chef at the Four Seasons Resort Lana‘i at Manele Bay and The Lodge at Koele where he oversaw management of all dining outlets and offsite catering.

He has also previously worked at the Four Seasons Hualalai on the Big Island of Hawaii and the Four Seasons Terre Blanche in Provence, France.   

Additionally, he boasts an incredible international career and has worked for Ritz Carlton properties in the USA, China, Korea, Japan and Spain over the span of nine years.  He speaks several languages including French, English, Spanish, Korean and Mandarin.

In 2000, Chef Huet also owned The Santa Barbara Authentique in California that was voted the Best French Restaurant by Julia Child.

Chef Huet is a graduate of the College St. Croix, in Orleans, France, and received his formal culinary training at Les Chaises in Chartres, France.  He then apprenticed at the 2-Michelin Star Relais-Chateau La Panetière.
